Frequently Asked Questions

Why is cost calculated from gross weight and not net weight?▾

You pay for what you buy — the gross (purchased) weight. If you buy 1 kg of carrots and half of it goes to peeling waste, you still paid for the full kilogram. Nappe always costs from gross weight to reflect your real food cost accurately.

Why does my card show "Cost outdated"?▾

One or more products used in this card had their price updated after the card was last calculated. Open the card and click "Recalculate costs" to update to current prices. The old cost values are preserved until you explicitly recalculate.

Can I use grams and kilograms in the same recipe?▾

Yes. Set your product's recipe unit to "g" and enter ingredient quantities in grams. If another product uses "kg", that's fine — each product has its own unit setup. The conversion factor on each product handles the math.

What's the difference between a prep and a technical card?▾

A prep is a sub-recipe (e.g. a sauce or stock) that exists as a component. It has a cost per gram and a yield percentage. A technical card is a complete dish — it combines products and preps and calculates the cost per portion and food cost %.

Can I add a prep inside another prep?▾

Yes, up to 2 levels of nesting. For example, a "Demi-glace" prep can be an ingredient in a "Bordelaise sauce" prep, which then goes into a technical card. Deeper nesting is not supported to keep cost calculation transparent.

Does scaling change my original recipe?▾

No. Scaling is always non-destructive. The original card is untouched. You can save a scaled version as a named snapshot if you want to preserve it.

Why are purchase order quantities rounded up?▾

Suppliers sell in practical units. You can't order 100.3 eggs or 2.37 bottles of olive oil. Nappe rounds up to the nearest sensible increment: whole units for discrete items (eggs, bottles), 0.1 kg/L for weight and volume.

How do I remove the watermark from PDFs?▾

The watermark appears on PDFs exported from Free plan workspaces. Upgrade to Pro to remove it. Contact us if you need Pro access — during beta we grant it manually.

Is my data safe if I delete my account?▾

Deleting your account permanently removes all data — your account, workspace, products, preps, cards, projects, and purchase orders. This cannot be undone. We recommend exporting your data first (Settings → Advanced → Export my data).

Can I export my data?▾

Yes. Go to Settings → Advanced → Privacy & data → Export data. This downloads a JSON file with all your products, preps, technical cards, and projects.

What currencies are supported?▾

You can set any currency for your workspace in Settings → General. The currency is used for display only — cost calculations work the same regardless of currency.

Can I use Nappe on mobile?▾

Yes. Nappe is a responsive web app that works in any mobile browser. All key features — viewing cards, scaling recipes, creating orders — work on phone and tablet. For the best experience on iOS/Android, add Nappe to your home screen from your browser.
