Recipe Scaling
Scaling lets you adapt a technical card to a different batch size without changing the original recipe. Nappe offers three scaling modes — all accessible from the Scale tab inside a card.
Important: scaling is non-destructive
Scaling never modifies your original recipe. All ingredient quantities, output weight, and cost calculations shown while scaling are temporary. Your default card remains unchanged. To save a scaled version permanently, use Save as version.
Mode 1 — By output weight
Enter the desired total output weight (in the same unit as your card's output). Nappe calculates a scale factor and multiplies all ingredient weights by that factor.
Example: original card yields 2000 g. You need 5000 g for an event. Scale factor = 5000 ÷ 2000 = 2.5. All ingredients × 2.5.
Mode 2 — By portions
Enter the number of portions you need to produce. Nappe divides by the original portion count to get the scale factor.
Example: card is for 4 portions. You need 10 portions. Scale factor = 10 ÷ 4 = 2.5.
Mode 3 — By key ingredient
Mark one product ingredient as the key ingredient (click the star icon on the row). Then enter how much of that ingredient you have available or want to use. Nappe scales everything else proportionally.
Useful when you're working with a fixed quantity of a main protein or a seasonal ingredient and need to know how much of everything else to prepare.
Scaled costs
While scaling, Nappe shows the scaled total cost, cost per portion, and all ingredient weights. These are calculated from the current product prices — not snapshots.
Saving a scaled version
If you want to preserve a scaled version (e.g. "Banquet version — 50 portions"), click Save as version inside the Scale tab. This creates a named snapshot of the scaled recipe. Versions are accessible from the Versionstab of the card.
